OK here we go. 7lb butt with a modified Jeffs rub. This is my first attempt at qview so let me know how this looks.

Looks great...I have not smoked a butt yet, but plan to next weekend for the 4th...

I have a question for ya...does the wood chunk holding your thermo mess with the temp? Thats a great idea and I may have to just borrow it from you...

No, the probe sticks far enough through the wood that it dosen't effect the temps. Just a cheap way to keep it off the metal grate. It works good, give it a shot.

Yep, everything looks wonderfull, another 4-5 hrs and you are gonna be the proud parent of a 4 lb boston butt!

for me its been in the 140 - 165 range, when you take it out to foil it it will probably slow down on ya a little too. you were'nt plannin on having an early dinner were you. he he
 
I think your plateau is generally between the 140-150 mark. If you stick at 159 for too long, and if ya plan to foil at 160, ya just might say "CLOSE ENOUGH! This ain't an exact science! Looks great so far though!
 
Yeah it's the right pic. I just got done spritzing it before I took the picture so it looks a little wierd. I don't have a ton of bark but there is some.

You too erain, I'm not usually up that late. I was pretty foggy getting up this morning to put this on. LOL
 
Ok, we're moving again. Stalled at 160 for almost 3 hours

. Foiled er up at 165 and temps are now continuing to inch up. We might eat tonight yet

. Here are some pics right before going in the foil. The bark developed nicely during the stall.
