First build, a question about the interior

I have an upright freezer that I'm going to convert to my smoker. Once I take the plastic and insulation out I'm going to re-insulate with Rockwool. My question is, can I use OSB as my interior box? I would use sheet metal at the bottom because of the propane. But because of ease of fabricating, I would like to use wood.

no. use sheet metal. 

Of the freezer you are planning on using does not have a metal insert i wouldnt bother. Find a fridge or freezer that has a metal interior and use that. They are bullet proof from the porcelain coating, then you only need to worry about replacing the trim and a few other small plastic pieces rather than the whole inside.
