Cooking my first brisket today. It's 6.5lb. I scored the fat and am cooking it fat side up. Looking good so far. 2 1\2 hrs in and it's at 126. Cooking a butt just incase it doesn't turn out well.
 
Looks good. Be patient and don't panic. Let the Brisket smoke until a therm probe slides in with no resistance...JJ

I just checked it and it's at 148 right at the 4 hr mark. I'm in no rush and I plan to do the probe test onot it to tell when it's done. Thanks Chef JimmyJ
