First brisket! with q-view

  1. Getting ready to throw in my first brisket! I'm doing just the flat, and a relatively small one (about 3 pounds). Going to use a combo of pecan and cherry wood, planning on roughly 1.5 hours per pound, and wrapping at 160 IT.

  4. Turned out great! Cooked to 194 IT, and let it rest about an hour. No visible smoke ring, but definitely some smoke taste and very tender.

    Not bad for your first brisket. I'm glad it was still tender for you. Keep up the good work.
