Very new to this forum, but already learning a lot from reading everyone's post. It's nice reading all the info and tips from experienced smokers. I'm a novice smoker, but going to try my first attempt at a brisket tomorrow. One of the many things I'm not sure of is should I put it in a foil pan while smoking or straight on the grill. Also, do I sear both sides first or just start smoking? Thanks!

Welcome to the SMF. Gonna try a brisket right off the bat. Good for you. It can be a tricky piece of meat. So don't get freaked when it stalls. I'd put it right on the grate. You can sear if you want, but that's really more of a personal preference.

Thanks, Dude. How about putting a pan of water in there? I'm using a New Braunfels Longhorn Tradition.

Welcome to SMF...I like to do brisket in a roaster pan with the wire grate. That way you get all the juice from the drippings (and if you refrigerate it, you can skim off the fat easily and add a whole lot of flavor to the meat when you serve).

Thanks for the info. I can't wait to get up early and get started (it's gonna be cold). If it turns out half way decent, I'll try to post some pics. What are some easy smokes to do while I'm just learning? I love doing this, I'm just not that good at it -- yet!

Jump right in there with a good choice of beef that is a real challenge. Not really. I loved brisket so much it was one of my first choices to smoke. With the help of this forum it came out great and is further being refined with the wealth of knowledge gleaned from the great smokers of SMF.
