Sorry i havent been on lately but im back with new mods and new smokes. Hopefully a few remember me.

First off, im doing my first brisket for some friends that are stopping by tomorrow. This meant that i had to finally mod my UDS with the weber lid by more or less following DDAVE's instructions(thank you for the write up).

First, brisket.

I am just about to throw it on at 12:00 midnight and plan to have it in the ice chest so i dont keep any of my guests waiting for lunch tomorrow(2-4pm ish).

I used a mixture of worcestershire sauce and mustard for the base. I think have a rub i found here on the forum that contains the following:

kosher salt
chilli powder
paprika
cayenne
cbp
ground mustard
granulated garlic
cumin
sugar

I wont chime in with many more photos until the after party hits. I will have one pan catching drippings for a jus and another pan on top with beer just to keep the UDS moist and see if any flavor will penetrate. Only time will tell.

I plan to use rivets sauce but ill add more on that tomorrow.
 
Tasunka, just the man i was hoping would chime in. how is that Brinkman from walmart treating you?

I just foiled it. I was going to give you guys a sneak peak as i was foiling but my battery once again died.
