First brisket on mes40

    Smoker started at 230, foiled at 170 to 190, pulled and rested for an hour and sliced

    Not bad for the first one. Could be a little juicer but not dry by any means

    Looks good from here, especially for your first one.

    Brisket flats are sometimes hard to cook & keep juicy.
