first brisket in new smoker

    Smoked it about 3hrs then put it in pan over night in over on 200 put it back on smoker this morning it was 180 smoked it till 195 tooth pick tender.Wraped it in old quilt in garage for 4hrs was still warm when i sliced it.

    Looks amazing Bishgeo....but how was it ???

    Was this only the flat?

    12# packer it was fantastic no sauce needed.
