The Cold Canadian North
Here it is 430 am ,,,,what the heck am i doing up? lol

My first ever attempt at brisket, So i figure i might as well do 2 of them so i have lots left over for sandwiches.

A 9 lb (cut in 2 to fit) and a 6 lb angus .

Smoker fired up at 430, Settled at 225 by 5am and throw the brisky in all rubbed up in Jeffs rub.

Hope this turns out! ive got some folks coming for dinner tonite.

First 45 min almost drove me crazy with temp bouncing around. Up to down to 180 up to 250 , back down, then up, kept adjusting the propane!

what the heck, then I noticed the smoker probe was getting directly dripped on by the meat.

Moved probe, all is well at 225 now...........rookie mistake.
 
Noon Now, Bigest Flat is at 158,smaller ones at 178.

 It is a little colder with a light wind today, was 33 when i started and its only 39f outside.A little harder to keep temp up on smoker, seems to only go up to 210-215.

Low and slow i guess.

I plan in foil wrapping the big one at 165 and probably just let the smaller ones go without foil right to 195.

Spritzing every hour with a mixture of aged rum, apple juice , and apple cider vinegar.

Must be doing something right, already had 2 neighbors walk around to see what is cooking.

Now i am thinking its time to upgrade to a Traeger texas 075 for less hassle for the long smokes.

Finished product turned out great.!  Moist and flavorfull. The burnt ends didnt last long, everybody loved them.

Glad I did 2 of them, now o have lots of leftovers for sammies. mmmmm
