Hello! It's going to be in the 60s tomorrow in the Omaha Metro sof I stopped at Sams and grabbed a 7.75# flat. This is my first Brisket so I hope all goes well. After a quick trim I hit it with 50/50 kosher salt/course black pepper. It will go in the MES40 tomorrow morning. I'll use my pellet maze with pitmasters choice pellets from Amazen pellets for smoke.
