First beef ribs in the smoker

  1. Yesterday was my wife's birthday and her favorite food is beef ribs. I have grilled beef ribs several times, but this was my first time in the smoker. I did a 4-2-1 method and it worked out pretty well. On the grill the beef ribs were still pretty tough and i had to floss a lot to get the stringies out of my teeth, but with the long smoke it was fall apart tender.

    heres the wrapped 4 racks of ribs



    Here's the ribs after being coated with a dry rub overnight and popped in the smoker with hickory. I had the MES set to 230 the whole time.



    This is the finished shot after the smoke, i put in some homemade chipotle bbq sauce (didn't need to use much more than a dab on each rib, they were so good alone)



    And the final picture of the ribs on the table.



    unfortunately my wife just joined weight watchers, so smoking beef will be a bit limited till she reaches her goal.

    You've got a good wife there, favorite is beef ribs well she is alright in my book!
    I'll take beef ribs over pork any day, I know it's considered blasphemy to say such things.

    Shame weight watchers doesn't have a BBQ line where you could slow smoke some tofu ribs and even have some pullback somehow, that would be great!

    Thanks for the look and great pics of you MES cooking beef rips.

    Looking at your pics the MES in the upper left, what is that in the up left corner of the opening frame?

    My wife loves beef ribs also, but she prefers them as she does her steaks. Medium-rare. I never do them longer than 4 1/2 hours, so more a 2.5- 1.5- .5 works well for us.

    I have yet to smoke beef ribs. I may have to keep my eyes open for some on sale. I just love my BB's so much so its hard to pass them up.

  9. Thats a light that they built in to the new redesigned MES with the viewing window. The viewing window is kind of pointless, because after about 3-4 hours of smoke, you cant see anything inside, even with the light on. plus it lets out more heat than a fully insulated door.

    and rbranstner, you do have to peel off the membrane on the bone side of the beef ribs, i did it the night before, right before i put the rub on.

    Yummm! Beef!!!! I love beef ribs. They always look so bad in the cryo but turn out so good in the smoker. They are also my wifes favorite.

    Now you are really lucky to have a wife who likes eef ribs too. We love them in this household and I try to smoke hem as often as I can find some good ones. Thats the hardest part around here.

    Welcome back, haven't seen you around in a while. Great looking smoke and Happy Birthday to your wife. For just starting on weight watchers you sure made her a lot of ribs.

    That's a lot of good lookin' ribs there! I love those things when I can find a good batch of them.
