Had a small clod roast for a test run. Seasoned with Lawry's and studded with garlic cloves for the day. Ran Bear Mountain Apple pellets again at P3 smoke level for about 30 minutes to warm everything up then went to 325 degrees on the controller as it was getting a bit late. Stuck my digital probe in after another 30 minutes and about 30 minutes later we were at 135 IT so the roast was removed and tented tightly with foil as I got the scalloped taters together. Not a lot of marbling on that meat so I was apprehensive about the chew. First bite and it was like 'OMG good'.....tender as can be, melt in your mouth deliciousness. I'm gonna love smoking on this thing and for now very pleased with the operation....Willie
