First attempt; Bearcarvers beef sticks (w/ Q-View)

Been wanting to try this one for a quite a while so here goes nothing. Using Bearcarver's recipe (imagine that), added 1 tsp of groud cayenne pepper for some heat.

All brined and rolled up, ready for the Big Chief in the morning. My first impressions so far is the smell from the raw meat is amazing

My main concern is that they won't hold together while handling them into the smoker. I will try to be gentle with these little gems.

Any tips are greatly welcomed!

They will be fine. We've made these many times and have never had a problem. If you have them in the fridge you're good to go. You could pop them in the freezer for 30-45 minutes right before, but I haven't found the need to do that.

Parchment paper, Q-mats and Frog Mats are good options for placing in the grates if you're really worried about it.
 
You're right, sailor. They were nice and firm and easy to handle!

I'm trying to follow Bearcarver's instructions the best i can, but my Big Chief has no temp control. I might have to finish them off in the oven to get the internal temp.

Duke, you are going to love these little jewels. I have also made these many many times.

My wife and kids love them too. I actually use the round double nozzle of my Jerky Gun

to shoot these out. Even that small the come out great.

Looks very good. Wish I had some snow.

Update...

5 hours in, i opened the Chief up and stuck my temp probe into the thickest piece. Internal temp is only at 111 degrees, so it's off to the oven after one last pan of hickory, as i expected. A little too cold today.

These look incredible and smell even better..

These will be a staple in my fridge/freezer, no doubt. Amazing. Unreal. Will be doing another batch before month end.

The guys at the fab shop will be hooked for sure come Monday (if there's any left).

Your sticks look great! I have made Bearcarvers sticks several times and was just thinking today, time for another batch, soon as I finish the turkey legs I have in brine tonight!

They're not lasting long. Took a bunch to the shop and the guys devoured them, and i can't begin to describe how good they went with my eggs and coffee Sunday morning!!
