Congrats on your first rib smoke. They look pretty good to me. You can start to see the bones from the meat pulling back. That's a good indication of doneness. Might have liked to see more bones, but that may have been a result of the temps coming up to high to quickly. But it looks like it was a success. Nice smoke ring. Good job.
dang but those look good! got me chompin at the bit to get mine on. they're thawed and about to be rubbed now. doing a rack of baby backs for the people I work with (only 2 people) for lunch tomorrow, and 2 racks of spares, and a rack of beef backs for my parents tomorrow for supper. I love days like that.
