First attempt at ribs Q-view

    So I bought a WSM, dabbled with a few easy smokes and now its time for some big time.  Gonna smoke 6 racks of spares tomorrow and have a little get together.  Hope I dont mess up ha!

    I prepped the ribs tonight cutting them St Louis style and rubbing them down with billbo's famous.  All I can say is I think I have more tips than racks, two gallon freezer bags full!  Sucks too cause Im not gonna be able to fit them on the WSM as I wanted to get as many racks in there (comfortably) as I can.  Im gonna use 2 brinkmann rib racks from home depot and Ive already cut the racks in half. 

    My job here is done for the night!

    Good luck on the maiden rib voyage.  That bowl of tips can be of good use after you get your ribs off of the smoker.  If you get too tired, then throw them in the oven but I really, really recommend smoking them & then dropping them into some beans.  Your taste buds will love you for it.

    What a surprise i ran into a major problem!  So I lit my wsm up minnion style and I guess I used too many coals or all the partial burnt ones in the smoker lit up too quickly but I could not get this thing under 275!  After trying for an hour I dumped it and started over (yeah allllll the coals were lit)

    So Im over an hour behind schedule but o well, holding like a pro now!

    I have a competition (hopefully) this Wednesday at our county fair with pork ribs. I went to Youtube to learn how to trim a slab of ribs to become the St. Louis cut.

    What do you do with all that trimmed meat?

    Is it still 'grillable/smokeable'? Can it get used maybe for sausage once trimmed from the small bones, or just thrown on the grill with the bones?

    My kitchen is in the final stages of a remodel which will hopefully be over with tomorrow. If all goes well, I will have my fridge back which is much needed for the rub and other preparations. If I don't - maybe next year. I'm not going to run around like a crazy lady if things aren't where they need to be.

    The first prize is $100 - this is only the 3rd year our fair has offered this contest. Last year it was nearly all men (I didn't join in last years competition) participated.

    If it were me...  I would join the comp, give them your best ribs and you will learn alot.If you like to compete you have to start somewhere. Good luck with the fridg....The rib tips I like to smoke them , then dice and add to some baked beans, gives a great flavor to anything you add  them too!  Now go out there and WIN that $100.00    [​IMG]

    Great photos and looks like it came out good for you!  What method did you use to smoke the ribs?  Were you able to fit all them ribs on at the same time?

    I was right!

    I was out mowing my yards on Saturday, and I got a whiff of some really great Q coming from a little South of here, from down in my Birth County (Bucks). I hope those ribs tasted as good as they smelled!

  18. Really nice loking ribs - great job!  Just wait until you get good at it!!!!!   That was what drew me into smoking in the first place...I tried making ribs on the grill and loved them. Then entered a very small competition, got my butt whooped and then got a smoker. It has been amazing the difference from the first smokes to now and it keeps getting better!

    On a side note...I am not helping out the local economy much as I dont go to the local rib joints at all any more!

    nrok2118 - I have never used rib racks before. Your ribs look like they turned out great! Did you find that you increased the cook time based on the amount of meat you were smoking?
