First attempt at Pastrami

    Glad to see you get out of your pastrami shell. What did you smoke it with? At what temp? How long did it take you?

    I find keeping my WSM at around 235 is very easy. Took about 9-10 hours. Deciding on what to smoke this weekend, definitely going to whip up a batch of the Korean chicken wings! But what goes on the second rack.....hmmmm.......
