i did this, cause i couldn't find a grill grate to fit the fire pan........with these holes, i can shake the firepan, and have more ash fall out......if you notice........i place holes around the main vent hole in the ash pan this fits in......don't want ash building up in that hole, since i modded the ash pan like i did

drilled 5/16ths' holes to start out with......this way if i need to, i can drill larger.......

Rich........with the ecb gourmet, those side holes are oem.........it came/comes that way........
 
I think I'm going to put in some expanded metal in the bottom as a trial run one day. Cut out the bottom of the charcoal pan and install expanded metal.


I have two Cookin' Cajuns and they are designed just like the Gourmet. As a matter of fact I believe that's where the design originated.
 
wave.........if you do that..........make sure its not on a wooden deck.......or the middle hole of the ash pan will let coals thru.......that it IF your ash pan HAS that middel vent hole
 
Well I just came in and from drilling my pan and either after dinner or tomm. after I clean out from this snow I will make the Air flow control for the bottom..
