I'm going to make the finishing sauce for the first time tomorrow, for some PP. Do you use it warm? And, will it keep for a few days in the frig?

I like to serve mine warm, or room temp. If you're making a vinegar based sauce, you should be able to keep it in the fridge almost indefinitely....depending on what else you put in it.

Hope this helps...have a great smoke!

I have SoFlaQuers in the fridge all the time, seems to last weeks no problem, never seems to last longer than that though, bottles always end up empty! Make a double batch if you can.
As a side note, I completely over cooked/smoked a venison front quarter, cut, tugged, pulled it off the bone, tasted it, it was dry, added SoFalQuers and by the next morning everyone that tasted it said it was veni-crack!
That finishing sauce is outstanding in my opinion.
Godspeed,
bigslick

I have used my finishing sauce hot but room temp is good too. Now for refrig time it depends on what your sauce is made of.

im with you i leave it out too just like my cattlemans bbq sauce and have not had a problem, the vinegar keeps it good
