It’s been a while since I’ve posted any Q-view... Thanks for the help with the turkey questions! I’ve done lots on my smokers, but this is my first turkey, 11lbs+ and only $4 at Kroger (38 cents a lb). I used Chef JimmyJ’s brine for 24 hours, dried, then sat open in the fridge overnight. Rubbed with melted butter, olive oil, S&P, garlic powder, paprika, poultry seasonings, rosemary, and thyme and put an onion, lemon juice, and butter in the cavity. In the MES on 275 (high as it goes) for about 4 hours with hickory and cherry wood. I’m going to crisp up the skin in the oven later before we eat it. Pretty happy with the color, hopefully it tastes just as good.
Also made pumpkin spice cupcakes, a bourbon pecan pie, brownie bites and working on corn casserole. I need a nap, guys. -Jaime
