Had a heck of a time locating any Pork Butt Locally but true to the addiction, I managed to score two 8 lbrs. in a twin pack from a local caterer who buys them buy the case in Anchorage (175 miles away)...

Still can't believe no one else in town carries them on a regular basis.

So I defrosted, injected and dry rubbed one and let it marinate over night and then palced it in the smoker at 6am.

Smoked it till internal temp reached 165.




Foiled it and whipped uo some of Dutch's Wicked Baked Beans (minus the pineapple) and through them in the smoker.



The wind was blowing pretty steady all day long and I thought my family was going to mutiny before I ever reached 200 internal temp... but after almost 14 hours in the smoker and then allowing it to rest an hour, the Pork was ready to pull.





I served it with fresh homemade cole slaw, Dutch's Wicked Baked Beans, and a finishing sauce I found here on the SMF.



Here is the trio plated just before the vultures descended on the kitchen.



By the copious amounts of pork, beans and cole slaw my family devoured, (one son eats nothing with sauce and he had two helpings of cole slaw....and my youngest daughter never finishes her first plate but went back for seconds on everything), I would venture to say that either this meal was a success or I had better start cooking earlier next time and not feed them so late... or both.

Everything turned out awesome looking .. If it tasted anywhere near as good as it looks, im sure there wasnt much left !!!

I went to 5,6 grade in anchorage.Glad you found some butts.I can only imagine what they cost.....

Actually was not that bad.... Reg price was $2.69 p/lb but the picked it up on sale for $1.69 p/lb and charged me the same..... Tried talking him into more than just the two at tha price (was like buying 2 for the price of 1) but two was all he would part with.
 
Nice! It all looks really good. Perhaps next time you talk with the caterer, see if they'll order some butts for you too.
 
I became friends with a local Q joint owner and buy most of my brisket, butt, and sausage from him at his cost plus tax. I have helped him on some big catering gigs and eat at his place almost weekly in return. Last week I took him some home made Kielbasa for his use only.

If you can take him some Q now and then and ask when he places his orders if he would consider selling you half cases. That here is 4 butts to half case. 6 brisket flats to a half case and 6 racks St. Louis style ribs to half case. If ya have a freezer the price is worth the storing.

Just make sure you recipricate in kind somehow so he feels it is a win win relationship. You may find he can and will get other cuts for you by the case if ya want.
