We I have been getting good flavor but seem to get tougher than I wanted ribs until now. I smoked 6 racks of ribs Sunday and they came out pretty dang good ! I smoked for 1.75 hours then foiled them with a touch of apple juice for 1 hour opened then up flipped them end for end (had 6 ribs on their edge in the foil pan) then let them cook til a total of 4.75 hrs. and they temped out at 185 - 195 and I could feel that they were very tender with the probe going in so I pulled them at the 4.75 hr mark. They were in temps of about 200 - 225 the whole time. Started the smoker with charcoal and oak, used hickory for flavor and used oak to maintain temps never adding charcoal after the start. Pictures are not so good as I think the cell phone lense fogged up a little when I came in from outside as it was about 90 - 95 degrees outside and 75 inside. I am surprised that the smoke ring was almost all of the way through the ribs since they were only getting smoke for 1.75 hours. Let me know what you think. Thw wife does not like ribs and a friend doesnt either but they ate the crap out of them they both said that they were fantastic though.
