Finally got to make some sausage & CB again!

Ok here is how the CB is coming along...

Hot & Spicy

You can see the liquid being drawn out of the loins - this is normal. Just keep massaging & flipping the loins daily & most of the liquid will be reabsorbed as the loins finish curing

I decided to cook the rest of the loose sausage tonight...


Notice there is no grease - this stuff beats what you buy at the store hands down!


Figured I'd cut up some fresh mushrooms to go with the sausage...


Sautéed in olive oil & herbs.


Sausage done.


Mushrooms done.


And a nice glass of juice from a cow to finish out the meal - yumm!

Well some things came up & I didn't get to cook the Bratwurst till tonight...
