After smoking meat every weekend, asking questions on here, going through several wood flavors, and several slabs of ribs I finally got it. This past weekend I was able to find several bags of lump charcoal and grab a few slabs of baby backs and lots of beer(dos equis). I finally got my smoker even after making recommended modifications to my bandera to give me a consistent thin blue smoke. No more of that overwhelming thick white smoke but pretty blue smoke. I even tried putting my hickory off to the side of my firebasket instead of in it. Ill have pics later but its own again this weekend. Weather has been great here in arkansas. Im a nurse and its a pay weekend for me so maybe ill get fancy with it if you know what i mean

Looking forward to the pics.

I'm new to smoking. I've purchased a Wichita model (20 in.) Yoder offset smoker. I smoked a couple chuck roasts today. They turned out pretty good. However, I had trouble maintaing that TBS. Each time I added a wood split, I would get that whitish smoke that would last 10-15 min. before it would die down a bit then turn to a more bluish color.
I used the minion method for my heat supply. Once the smoker got to the temp I wanted I added the wood splits (hickory). Like I said I would get a large amount of a whitish smoke then eventually it would turn blue. Any suggestion that might help.

Thanks

I never threw wood directly on the fire but wedged it between the firebasket and the opening of the smokebox. That way the wood wouldnt just burst into flames but gradually got hot and let off smoke very easily

Cwalk,

If I understand what you are saying, you use a charcoal box for your fuel (charcoal briquettes or lump charcoal) then you wedge your wood up against the charcoal box and the opening to the smoke chamber where the food is. Am I correct?
I think my next purchase will be a charcoal box for the firebox. But for now would using lump charcoal and apply the Minion method for heat then lay my wood splits next to the pile of lump accomplish the same as what you described.
If this works I could see that you would use a lot less wood during your smoke. Is that true?

Thanks for your help.

I'm using a large BGE, but I don't seem to have much of a problem when I'm using dry chunks mixed in with the charcoal as I do when I try using chips (either wet or dry).

In any case, it's kind of neat the first time you know you're smoking and have to look twice to see the smoke.
