Finally got my pork belly

Just started my first batch of bacon. 

Any suggestions on what to put on the outside before I smoke it? CBP? honey? brown sugar? or should I have put that on with the cure

heres the trimmed picture. I then rubbed the cure(buckboard bacon kit) on and put it in food saver bags.

If you used the Hi Mountain Buckboard Bacon kit it will have seasonings mixed in. I would suggest doing it with just that the first time to see what if anything you may want to add the next time. Believe me there will be many next times once you make your own once

I have a whole slab curing in the refrig as we speak. Now I used the hi mountian buckboard bacon kit to and that's what we used at Jerry's (pineywoods) for the 170lbs we did there at camp. Now I will be smoking it sometime during the week next week maybe. I'm thinking of maybe adding some crack black pepper to the outside but maybe some Jalapenos after looking at Jeanie's (cowgirls) post. But I would just cure it for now and then you will have atleast a week to figure something out.
 
I am so glad you got your bellies! I'm STILL waiting on mine, hopefully Tuesday. Geez. But in the meantime I will keep checking out your progress and any tips would be appreciated!
 
I can't wait to try this.  I guess that the only thing holding me back is I don't have a slicer yet.

Good luck with your 1st try!  I like the pepper idea, too.

That is such a great picture, the kittie in the background with the upside down head (mine do that too!) and the big kittie looking at the camera like "get away from me or I'll kill you" and the cutie baby! Sound asleep, not a worry in the world. Life is good! Thanks for sharing my friend!!!!
 
i dont have a slicer yet either. Im waiting for the cabelas one to go on sale and Ima scoop it up. just bought a nice stainless steel table from them to clean deer, hogs, and fish on. should be here next week hopefully. it was on sale. 16gauge 3'x2' for $129 with a bottom shelf also
