Finally done.

    Well, it's been a while since I have posted on SMF.  After my last post last july, I went in the hospital for serious surgery and didn't manage to complete the smoker project till yesterday.  Thanx to everyone who gave advice and support.  Last year, at this time, I wasn't even sure that I would ever be able to complete and enjoy my creation.  Today I smoked 2 racks of spare ribs.

    Mustard and a commercial dry rub for 3 hours at 225 degrees.  Wrapped in foil and cooked for another 2 hours then removed the foil and smoked for another hour till I had the right internal temp.  For the last 30 min, I put Richards Vermont Made Hot Barbque sauce on one of the racks.  It was a big hit.  Thanx again.

    Congrats, that last pic is the $$ shot. Glad to know your healthy and back in action. It's all good my friend.

    First off I'm really glad you are back on your feet and smoking. You shocked me in the beginning when I first saw the oven. I thought we might have to send out the dogs and stop you from cooking the ribs in an oven. After all a member in good standing wouldn't let another member cook ribs in the oven or boil them either. Now that I see that oven is the smoker you are safe from all sorts of punishments. OK now your ribs look great and nicely smoked in the oven. Now I see that you from either from or in Jacksonville (Strikezonefishing.com) is only in Jax. So I'm really glad you got to smoke those ribs after all that you have been thou. So I hope that grace like them ribs too..[​IMG]
