First Hello! This is my first post and am excited about learning more about smoking. These Fatties are driving me crazy, I can't wait to try one. I have a couple of questions though: How much sausage do i need? (like to fill a gallon sized baggie at the correct thickness) Do you use the water pan in your smoker? (I'm not planning on doing a bacon wrap so crispy isn't important) Thanks in advance for any help!
