Well I gave ribs a try for the first time today. No sauce, no trim, no foil.  And wow these things are great, also used the UDS. The gasket around the lid made things better, temps still bounce around but its more controllable. I also made a mac salad and baked beans ( this bean thing needs work but was ok ) now I'm ready for ice cream.

Now you cann't ask for a better day of kickin back drinking a few cold beverages and smoking some ribs. You sure do have one fine plate of food you have made there Nutz.

I agree Lug, nice looking rack there. And to think I was getting ready to talk a little smack in your other post about the UDS since there was no rib pic there. Sure glad I waited and then saw this thread. 

I see your temp probe sitting on the grate. Is that how you had it to read smoker temps? 
 
Tom you are correct, that is my smoker probe.  $16 bucks at wal mart and worth about half that some days, but it is accurate.

I think hes gonna say that the temp probe should be up from the grate a little bit and as i type this i cant think why really? its how you always see the probes and i did mine that way when i had that temp setup but im not sure what it would hurt to be on the grate like that? maybe just wear it out quicker?
 
 
Roller it aint done yet! I have a special plan for this UDS ( when I get around to it )

ThunderDome thanks for asking that, not only was this the first slabs for me and the first time the UDS worked kinda right, but it was my first with lump ( RO )

Ground breaking kinda day I guess.

I made a rub from garlic powder, onion powder, ground mustard, cayenne, cumin, black pepper and salt.

The left over rub got dumped into some apple juice ( no sense wastin the rub ) and then I basted every hour or so.

I seem to recall reading somewhere on here that you are in danger of reading the temp of the grate and not the air when you place it on the grate like that.  I haven't tried either so I can't say for sure.

i think that might havr been the problem i just had on my meatloaf smoke, my analog temp probe was reading weird so i checked with boiling water and yes it was way off so calibrated and still it was off from the digital one, maybe thats why thanks, guess ill have to fire her up again...
