Fathers Day hog smoke

  1. Good morning ya'll.  I'm attempting to smoke about a 30 LB hog tomorrow for Fathers Day and wanted to know how necessary is it to brine the hog and does it have to be for 24 hours like i've been reading in other posts.  Thanks.

    No, no need to brine. #30lbs. will take appox. 10 to 12 hrs. Split her open neck to Butt(the real one), spread her with a stick (some way to keep her open as she cooks), add Apples ,Pineapple , Oranges , etc. and have fun.[​IMG]
