Looking at the newsletter I got yesterday and saw the recipe for Personnel size fatties so I decided to try it. This is the 1st time I've tried fatties and it looked good.
Used 1/2 lb breakfast sausage from our local meat shop
Some pickeled banana peppers (I didn't have any jalapenos)
Medium sharp Wisconsin chedder
Good smoked bacon, also from the meat shop
Jack Danials BBQ sauce
Rib rub
Got everything rolled together and put in a bag in the fridge overnight. Started it this morning at 250 deg with apple wood chips for about 2 1/2 hours until the internal temp was 170.
Let it reast while I made some waffles then sliced it up.
Sat down for a great breakfast of fatty, waffles with some good Menomonie Wisconsin Maple syrup and milk in the Linies glass.(waiting until later for the beer)
