since i cant find brisket in my area, i got an eye of round so as not to get burned out on pork. its 5.5 pounds. ok, i know you gotta pull it at like 135 degrees or so.....so what temp should i smoke it at? i plan on using my new amnspn with smokedaddy hickory/charcoal pellets (dont know if the 30% charcoal adds any extra heat)

i read eye of round gets done pretty quick im thinking a much lower temp for about 5 hrs? 175? i notice when i put loins in, they start at around 80 degrees and its around 2 hours before they get to the 130 range.

I do all lean beef cuts with the smoker running as low as I can. Usually 180-200. They still get done pretty quick.

Make sure you rest the meat a good 30-45 minutes before slicing and serving.

Make a batch of Chef JJ's smokey Au jus.
