Hi all. I just received a new Smoke Hollow #4 electric smoker, but I'm missing the owner's manual. I've done some reading on here and am excited to get started. I'm a bit confused on what goes where in the smoker. The smoker came with a hanging pan I assume is for water and two seperate square pans that fit side by side on the bottom rack. I know one is for wood chips and has a grate in the bottom but what is the other one for? Also water or maybe charcoal? Also anything special I should do to season the smoker before my trial run? Thanks.

Welcome to the house. Not to familiar with the Smoke Hollow, but lots have it and I and sure they will help out.

Thanks for the link Blackhawk. I've already been there and emailed them a request for an owner's manual but haven't heard back yet. I guess I'm just impatient. Is anyone familiar with smokers using three seperate pans?

Well I got a quick reply to my email from Smoke Hollow and I have a manual on the way. That ought to answer a few questions. I just put a small pork shoulder in her today though. Here's hoping it comes out ok.

It'll take a lot more than that to offend me. I get called much worse names at work.

Anyway I feel a bit foolish as I've answered my own question. It seems the hanging pan I was using for water is actually a drip pan to be used underneath the smoker. The person who assembled it had in hanging from the lower rack so I assumed (I know, ***_u_me) that's where it belonged. It's in the right place now and I'm a smoking away. I also threw in a pan of taters and carrots and a pan of baked beans. Can't wait. I'll take a Q pic for ya if I don't get too excited once it's done.

Well it all turned out great. I went very light with the wood chips so it wasn't very smokey but I'll change that next time. The wife loved the smokey baked beans. I got too excited to take pics until it was all gone. Thanks all.
