We always keep the oil between 325 and 350, careful not to get it over 350. Figure 3.5 minutes per pound and add a couple minutes to the end. A treat for the kids and adults..... have a couple cans of cheap biscuits on hand and throw them in the hot oil right after the bird comes out... let them turn golden brown and pull them out.... let them drain.... then shake some powdered sugar on them. My neighbor liked these almost as much as the turkey year before last. As far as the oil... it's either bad or good. You can smell it if it turns rancid. This post has me headin to the store to pick up a couple turkeys to fry. Thanks!
