After trimming up spare ribs, does anybody have any good ways of using the left over flap meat (the part with no bones just cartilage).

I just though some in the crock pot with some carrots and celery and set it to low. Hope it's good.

What do you guys do with that part of the meat?
 
Just season the extra meat and throw it on the smoker for a while.  It should cook pretty quick and then you have an appetizer while you are waiting for the rest of the food!

I always smoke it for about 3 hours or so, then pull the meat off and toss it into some beans, or save it for sandwiches, or tacos (or whatever).
 
I do what the others have said.

My daughters and wife love ribs, but not all the bones. So I will usually give it to them or save for other uses. I have even had to use them for the meal due to more than expected showed up. Something about our family and when they smell the smoker goin it brings them all over........
 
When I make ribs I always smoke beans underneath. That's where all that scrap meat goes and the rib drippy goodness goes.
