Hey all-

Greetings from Seattle. About to embark on my smoking hobby with my soon-to-be purchased GOSM Big Block. I plan to get some brisket, ribs, pork shoulder, chicken and fatties going immediately. I'll be sure to keep you updated on the progress but thanks for all the great posts...I feel like I already know what I'm doing even though I really don't.

You going to try all that at once? I don't have a GOSM so I'm not familiar with it's capacity. Looking forward to some q-view.

I too am new to smoking, but with all the available information on this site it didn't take long to turn out some good grubb. I also have a GOSM that I bought in December. It is very easy to maintain your temps, and is a good unit to start out on. I do recommend the 5 day ecourse, it will help a lot.

i am too looking to get a gosm myself ..hard to find here okc might have to order online.....this a great site ..alot help here as well....
 
OK City........SHOULD have some places that sell smokers........some have gotten the gosm at wally world........sam's club.........sportsman warehouse.........

Thanks for all of the great responses. I promise I'll be back to show off the goods at some point...although with a couple of little ones and constant rain up here, it might not be for a while.
 
Hi folks!

The sun's made an appearance and I'm looking forward to trying this smoker! Wonder if anyone can offer a quick answer to a couple of questions (which will show you how new I am to this! :)

- after the heat's up to that 190-225 range, better to heat with strictly wood or can I use both wood and charcoal for the length of the smoke?

- okay to use recently cut (still damp) wood, or better to cure it? I read from the posts that people like to cure (and pre-burn), but usually soak the wood first

I.S. don't use "GREEN" wood as in splits.........you need to use seasoned wood.........the wet part you are talking about, is mostly using chips, thats already been seasoned.....you should wait till tomorrow......supposed to get in the upper 60's tomorrow here in iowa......

in my sfb horz. smoker, i have used both charchol and SEASONED wood splints chunks.......recently cut wood is NOT seasoned........you will get nutting buy white billowy smoke, that will RUIN your food........it produces nuthing but creosote........

is this a NEW smoker?
have you seasoned the smoker yet?
that needs to be done first on a brand new smoker, or one thats been scrubbed clean...........

Glad to see yet another Iowegian on the SMF...WD is right-on about the green wood...TOOOOO much smoke.

If you would be so kind....head over to the Roll Call forum and introduce yourself a bit more properly. A little about where you're at....what kind of equipment you're using....and anything else interesting you'd like to share.
It's the best way to get the help you're looking for in here.....and 'sides that....we're kinda nosy that way.....
