the flour tortillas, roasted poblano creme and chilis

Gonna go ahead and post this as an entry but I doubt they'll be done before 2:00pm. Busy weekend!


German Rouladen Fattie:

Ground chuck with binder
Salt
Pepper
German mustard
Onion
Dill pickle
Bacon

This will be served with a hunters sauce.





Slider Fattie:

Ground chuck with a binder
Salt
Pepper
Ketchup
mustard
Colby jack cheese
diced dill pickle
grilled onions
bacon

This will be served on a bun.





Hour to go! We'll see.


So far they're looking good and no blowouts.
 
How in the world do you guys get those fatties rolled up so perfectly? I have only made one but it was a mess when I tried rolling everything together????
 
I did 2 fattys before I seen my competition well I have to say didn't think outside the box enough thats for sure.

Had a minor issue with this fatty the seem broke apart on me but it still held together well with the assistance of a couple toothpicks

Would of had plated pictures but as you can see in the above picture my little helper didn't want to wait any longer for his eats.

Oh yeah I made a peanut butter pie the other day and forgot to post some pictures so here it is. There is a layer of banana's and caramel on the bottem.

Just entering one fattie in the throwdown... It's gonna be a Pizza fatty. Here's the list of ingredients:


1&1/2 pounds of Italian sausage
Pizza sauce
pepperoni
canadian bacon
onions
bell peppers
mushrooms
jalapeno peppers
black olives
mozzarella cheese
McCormick Pizza seasoning for the rub

As a twist, gonna wrap a premade pizza dough around the whole thing maybe 15 minutes from being done and throw it back on either the smoker or oven.

Rich, I think I entered a 'sow' in the KY Derby. Oh, well... some of the folks' entries are just amazing.
 
Here it is. Ground venison/bacon mix - roasted poblano pepper - seafood boudin; crawfish, shrimp, spices, cream, brandy and rice with parsley.

This is the breakfast fattie, venison sausage with sauted onion, mushrooms, bacon and potatoes served on a toasted english muffin with egg gravy; milk gravy with egg scrambled into it. A very nice way to start the day.

These are the finished pics of my Pizza fattie. Every thing went according to plan except for my temps. They ran a little high (also smoking a turkey) and as a result, I didn't get much smoke in the meat. Still came out well with no blowouts.

Pizza the way you like it....lotta toppings, little bit of dough!

Everyone's fattys look fantastic and thanks for the compliments everyone! I had a blast and my wife is admitting me into a mental health facility for evaluation! (she's finishing her psychology major) LMAO! I am making an offer here that I think will really help everyone who has never made a fatty, help the forums with a little funding to keep going, and give everyone recipes after the contest results.

I write cookbooks covering Dutch oven cooking and really got inspired to make up a collection of recipes with your help, I'd like to see about having recipes sent to me with your Q views of your fattys then I'll publish and post an ebok on fattys basics from a to z, including how to roll your fatty, weave bacon for the wrap etc. I am no expert on fattys but, with your help we can have an awesome ebook on fattys. But, first I need BBQG and administrators to approve it all. I have the programs and have the time to do this right now. This would be smf's book. not mine or Jeffs but everyones book. Let me know what your ideas are by pm or I can start another thread.

I took my maiden voyage down the fattie blvd. today. I was planning on taking pics and entering

i grilled some onions and some pablanos, sauted some mushrooms in olive oil and a splash of soy sauce, then rolled all that up in a lb of owens sausage along with some cheddar and quesadilla cheese, and garlic powder. sprinkled some of my rub i used on my last brisket, and threw it in the smoker.

I planned on putting avocado in, but forgot and left it sitting on the counter
