Good afternoon all.

As the title says I am an Englishman living in Mexico.

I am currently using the ECB!

I would say my level of smoking is basic. I have smoked bacon, sausages and chicken. All came out well...I think...well nobody was sick after!

I must be honest and say that I am starting to lose interest in smoking due to my ECB. The problem I have is that there is not much of a choice here.

My name is Kevin and I am looking forward to learning from everyone on this forum.

Kevin I am a newbie to this forum also and have found some fantastic info.Some great guys have answered my questions.I am also a transplant to a latino country for me it has been 10 years.I have gotten used to the culture here but I am ready to bring back some of mine like smoking meats.

Hey Kevin, don't get discouraged I started with an ECB and turned out lots of good stuff Try some Ribs, Pork shoulder or Brisket Keep Smoking

Hello Kevin and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  I feel your pain brother.  I am from south Texas now living in the Midlands.  MAN; I have never SEEN so much rain.  You might think about building a smoker.  Depending on where in Mexico you are, they do have trees that make some good "Q".  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

There are some mod's that people have done to the ECB that greatly improves their ability. Just do a search on this and if you aren't in a position to upgrade to a new smoker, you may want to see if these would help you.

 Senor Kevin! Whereabouts in Mexico are you living? I have an English ex-pat friend who's lived in Puerto Vallarta for the past 30 years. He doesn't smoke himself, but knows all the good BBQ places.

Would like to know more information about your smoking, maybe we can help you out.  What kind of wood are you using, etc. If you're smoking bacon, I think you are already a step ahead of most people down there.
 
Apple is a good all-around wood to use. Plenty of it where I live.

I talked with a pitmaster in Puerto Vallarta. He can't get apple wood, but does very well with the local mango wood. Makes for some of the best bbq I've ever tasted.
