    I was going to UMAi this for dry salami but no time as i need to take something to the S, FL SMF BBQ nest week.

    Thinking Owens Red Barn or German.

    Going with OBBQ North Country SS. Hand mixing. Cover and fridge, tomorrow add 1/4 cup secret juice #99. Ha

    Looking good so far,, what was your ration elk to pork butt?? Have lots of game meat this yr.

    Heck i dont know, i just grind and put it in there. Was 3lbs of butt.

    2 1/2" fibrous casings soaking in water and a tad of salt. For the SS


    Secret juice #99 ready to be hand mixed into meat before stuffing.

    Second hand mix is done and SS are in chubs. Im only going with an hour of apple smoke.

    Cooling (yesterday)

    Then in paper bags and fridge for couple days.

    I'm kinda giddy about these chubs as the fibrous casing i used are about 6 years old, they have been in a vac bag. I might get some casing stick.

    Turned out pretty good. Krout juice changed the flavor profile.  The taste test i think it got some heat but its all good.

    Damn Nepas I wish I was your neighbor. I've been SO busy with work the last few months my freezer is damn near empty of all my goodies.I might have to designate a weekend or two in the near future to restock.

    Does the kraut juice give them a fermented flavor?
