Hello,

I am looking to build a smoke box/house.

Basically a bigger version of a MES smoker.

I am thinking about 6' tall 3' wide and 12-16 deep.

Thinking about 1/2 Plywood construction with blue board 1 or 1.5 insulation then maybe additional 1/4 OSB on the outside of the insulation.

I want use this for cold and hot smoking sausage. I want to load it up with 50 pounds of sausage at a time. 

For smoke I want to use the Amazing Smoker pellets, probably in a mail box mod, this way I can easily smoke cold or hot.

For heat I want to use a controller to run the electric element, probably 1500 watts or maybe even 2 - 1000 watt plates.

I dont have a problem setting up the controller with a relay or scr etc to run the elements.

My question is ... can I generate enough heat from the hot plates(s) to get the temp up to 250? 

If not .... what other ways can I generate heat and control it to my desired set point temp?

Smoke below 140 then cook the meat in your oven or steamer or simmer in water...... Don't worry about getting to 250...

I really want to keep it all in the box until it is done cooking though.

Good insulation and proper venting with a big enough element or 2 I don't see why not. You could even pipe smoke in from an old woodstove to supplement the heat on cold days. Honestly I think you could do it.
