Found this recipe in my mother in laws recipe box. She was a great cook, You could try cutting down the msg. I don't think it would make much change to the flavor. They go good with everything. And easy to make.

When I make egg rolls, I never use MSG, sugar, salt, or eggs.  I do add chopped ginger and garlic and sometimes oyster sauce. For me the salty flavor comes from the soy sauce / oyster sauce.  I also use the "Twice Fry" method.  Fry the first time at 320F unitl starting to color.  Allow to cool (At this stage they can be frozen for later use).  Crank up the Fryer to 375 or so and fry a second time.  That crisps them really well.

I made these tonight and I have a question. When you cook in a pan is this included

4 cups chopped shrimp

2 cups finely chopped cabbage

1 1/2 cups scallions chopped

2 lbs. fresh bean sprouts chopped

4 cups finely celery   or is it just

or is it just this

2 tbl msg

1/2 cup butter

4 tsp sugar

4 tbl soy sauce

4 tsp salt

2 eggs beaten

mix &cook   I cooked everything and put away for a day and there wasnt

I cooked everything at once and I'm not sure that was the way to do it. It cooked down to just a mash . Thanks for the recipe ,Bill

you cook the msg, butter, sugar, soy sauce, salt and eggs./ This mixture is cooked to a heated mixture/THEN pour over chopped raw veggies etc..stir this combination a few times but keep it refrigerated until the next day when you use it/

STRAIN it and put onto eggroll wrappers/ wrap and deep fry in pan or in deep fryer at 375* until golden brown

sorry about the confusion, hope you will try them again.

Bill
