Hi Everyone.  

This was my 2nd smoke with my ECB.   I understand now why it's called ECB.  Purchased a 8 lb Pork Butt from Publix on Friday night.  Brought it home, got it all washed up - dressed it with some Applewood Rub placed it in the fridge overnight.  Got up at 6am got the ECB working and placed the pork butt on the counter so it was room temp before placing on the ecb.Temp was at ideal, placed the pork on and let it be for 2 hours.  After 2 hours my temp dropped to warm - placed more charcoals in the pan - temp got up to ideal in 1 hour. To make a long story short I faught with the ECB ALL day for 12 hours. At the end of the 12th hour my pork butt temp was only at 145.   I had to wrap the pork butt in foil and place it in the oven @ 325 degrees for 3 1/2 more hours before the temp reached 191. At this time I was exhausted having to work with the ECB all day and try and understand why the pork butt never reached temp.  Well after the pork reached 191 - I wrapped the foil pork in a towel placed it in a cooler for another hour.  Removed the foil and finally was able to pull the pork apart.  The great thing the bone came right out with no problem.   Hopefully my next smoke wont be this time consuming and having to use a lot of charcoal.

Yeah the ECB can be a confounded little beast for sure. I found 2 mods that really helped. One was to put a grate in the coal pan. I would usually put 3 or 4 wads of foil about the size of golf balls under it to get it off the bottom so the fire could breathe. This would give me a few hours of fairly stable temps.
The other mod that was the most helpful of all was getting rid of it and making a mini WSM.
Once I discovered the joy of a truly adjustable smoker that would lock on to my target temperature like a pit bull on a postal worker, there was no looking back.
I've said it many times, but the ECB is the VW bug of smokers. Almost everyone has had one, and almost everyone has moved on. They're fun, cheap and will get you some smoked meat. And until you can move to the next level your ECB will teach you a lot about fire management and how to power through adversity. Look at as a rite of passage.
