I was wondering how many racks of ribs do you get on your ECB?  Do you lay them out on the grate or use a rack?  If you use a rack do you cut your slabs in half to fit the smoker?

I have done ribs in my ECB before but was only able to get about 4 racks on the two grates.  Then I bought one of those rib racks but had to cut the slabs in half to fit into the smoker.

Smokingma , on your a flat un-cut Rack won't fit , you could use a rack , but then too they would be too long.  I can't remember the name , but a while back a member posted a unique way to do Ribs in an 'ECB'.

His solution was to make circles of the Ribs and therefore saving space. I believe he got 3 Rack on and they cooked as they would in a rack or flat.

You will not be able to wrap them , however I've gotten  great results 'sans' foil.
You must have a good probe Thermometer , right . Then control your fire to an average of 225*F (+/- 10*F) . The Ribs will stay moist , tender and bite off the Bone (v/s fall off).

When you lift them with a thong , and they do this , you're good ,
Have fun and . . .

Thanks Stan.  I may give that a try.  I'm doing baby backs (2 slabs) and St. Louis cuts (5 slabs) tomorrow using the 3-2-1 and the 2-2-1 methods.  I'll try to remember to take pics.  I have 2 butts on my baby now.
