Easy, tasty chicken breasts with Q-view

    I smoked up some chicken breasts today in order to celebrate the new forum!

    I was going to stuff them but changed my mind, so here's what I did:

    I marinated them in Kraft's Zesty Italian Salad Dressing overnight.

    Rinsed and trimmed them.

    Hit them with some EVOO and a rub that I found over here.  I substituted 2 teaspoons of Poultry Seasoning for the 1 teaspoon thyme and 1 teaspoon sage (the Poultry Seasoning has thyme, sage, marjoram, rosemary, black pepper, and nutmeg in it).

    Let them sit out while the smoker was heating up.  Here they are ready for love:

    I put them in the MES on max temp (275*) with some soaked Mesquite chips.

    After 1 hour, they were pretty much done...

    but I sauced them, turned the heat down to 250*, and put them back in for 20 minutes (the sauce has sugar in it, and sugar burns at 265*).

    Here's how they came out:

    I tented some foil over them and let them rest while I made some fries and warmed up a hamburger bun in the toaster oven.

    It was good, but I'll try a different rub next time or at least stick to the original recipe.  I think that 2 teaspoons of "Poultry Seasoning" was too much.  Overall, I was happy with it, though -- it was fully done and not too dry.

    I guess that chicken breasts aren't a favorite topic around here, because I've only had one response in each of the threads that I've started about chicken breasts lately.

    Oh well, I guess that I just won't share my chicken breast experiences here anymore.

    Hey Bret,

    That is a good looking sandwich and I've never thought of making a smoked chicken breast burger, thanks for the idea, also thanks for the tip on sugar burning at 265°, I didn't know that, my bride doesn't like to see black on her chicken or pork chops, says it's "cramé" (burnt).

    As for not having many responses to your chicken breast threads, just remember a lot of people are not as experienced as you are with computers and they are probably learning how to navigate today so please don't stop sharing your experiences, also think of the lurkers that that learn from this site and posts like yours, but for whatever reason they don't join in, ...I'm not afraid of man or beast, but frankly the internet intimidated me, I lurked for 8 years before I had the courage to join a site and SMF was one of the first, so please have patience and continue your posting.

    yes there are alot of lurkers and i know it sucks to spend the time to make a qview and not get any love but you have to be patient specially with the boards being redone its hard to get around here now. thats some good looking chicken there and the fries look killer too, looks like you have the same slicer i do.

    That's some great looking yard bird. I think everyone was overwhelmed with the new forum last night learning the new platform, it should settle down soon. [​IMG]  I'm really liking this spell check also.

    Gene I think the chicken looks great!

    That gives me an idea...I may do those and slap a piece of white cheddar or swiss on them the last 5 minutes...man that looks good.

    My wife loves chicken breasts, but I'm not a big fan because I regularly screw them up.

    Chicken look great i do a lot but usually do them on the grill because they don't take as long, but now that i have seen your will rethink it

    I have a 5 dollar french fry cutter i got at harbor freight tools and it cuts them about like that. What can i say im all about the gadgets.

    Nice looking Sammie.

    Don’t hold off on the poultry posts.

    My doc has me quarantined from pork so I am looking for new ways to do beef and poultry.

    But, I didn't that time, and they still turned out good.

    Boneless, skinless chicken breasts are probably the fastest thing that you can do in a smoker.  Mesquite is great on them.

    Gene,

    I loved the q-view and I am envious, as i have had mixed results with cb's and loin in the smoker-seem to go from too rare to too done in a hurry (have to stop at the bar every trip to the smoker) [​IMG]  your pics are great too please keep posting.

    Thats a great lookin chicken sandwcih AND homemade fries

    Last time i put a rub on a chicken breast, and then sauced it, the two flavors didnt go well together.

    Keep posting those qviews.  I like the ideas you give me with your chicken.  I think other folks may be heavily interested in Brisk or pork but I love me some poultry.  (Besides, sometimes your qview makes me drool so much, I have to run & get a bib.  By the time I come back, I forgot where I was & move on.)

    I am looking for an easy chicken recipe and was glad to find your post. I am new to smoking forum so it would have been a shame if you didn't post. Trust me, all q-views are of interest
