Here was the situation. She Who Must Be Obeyed and I had a terrible cold. We'd been laid up for over a week. We were feeling a bit better but still felt like we'd been ridden hard and put away wet. However, my brother and his wife were coming to stay with us for a couple of days. We needed a great meal that didn't require a lot of futzing around. This and my next 3 posts were my contribution to that meal. One thing they demonstrate is how easy my pellet smoker makes cooking a meal.

The first thing I did was a dozen chicken wing segments that we served with SWMBO's veggies and dip for the appetizer in the afternoon.

I put the wing segments into a large bowl, added a tablespoon of oil and tossed them to coat. Then I added enough Louisiana Grills Smoky Spicy Sweet Hot rub to give them a good coating.

I had preheated the pellet smoker to 325 F and put the wing segments on over pecan smoke.

After 30 minutes, I turned the wings and gave them another shake of the rub.

I smoked for another 25 minutes.

Here is the finished product.

The Verdict

I do wings this way a lot now. SWMBO likes her wings with crispy skin. This gives a nice crispy skin, a great colour and the seasonings give a nice taste without over powering the chicken. My brother was very impressed and really enjoyed them. These are just one of my favourite wings and take little effort.

Looks good. A Pellet Grill is on the list. Unfortunately, my Accountant puts it WAY DOWN the list...

Those look amazing! If you want really crispy drop them in some hot oil for a few seconds after they have been smoked! Can't beat it, unless you somehow include bacon!

Thanks, I think my brother thought the same thing but they were just a light snack before dinner and there were other appies.

I find these turn out almost fried crisp by tossing them in the oil first. Thanks for the idea though.

A dozen great wings for four people? I'll bet the smells from your kitchen for the main event was all that prevented fist fights lol!
Har! It was just an appetizer, we are all old and She Who Must Be Obeyed had made a veggie plate and dip. However, I got the impression my brother would have liked more but I think I can take him in a fight.

Thanks, Richie. The remaining posts will go up as I get strength. Maybe some vitamin beer will help.
