I will be making my trip into the land of rib smoking this Sunday for the whole family.  I am going with spare ribs, St. louis style.  Looking for a few pointers, is 3-21 the best for spares or 2-2-1?  Mop or not to mop during the smoke?  225 the target smoke temp?  And should I rub them just before the smoke or the night before?  Will be smoking for 8 adults and a child...we will be grilling some country style ribs also, so that should cut down on the amount of spares that I need.
