Easter Smoke

After boiling crawfish for Good Friday at my Father-in-laws house, I headed to the mother-in-laws for a somewhat crazy or brave (being a newbie) smoke.

My mother-in-law invited 30 of her family member and after a few beers I agreed to smoke for them. So this was my plan, 1 - 7.5 lb butt, 5 racks of spare ribs, 5 lbs of sausage and 5 lbs of hamburgers. They were going to take care of all the other fixins.

After a good rub down,

I started smoking the butt around 7:00 pm Saturday night using a combo of hickory and apple and drank beer and applied smoke

until around 1:00 am then went to bed. I checked the IT at 3:30 and it was @ 160. Going great so far

. Back to bed 5:15 would come quick. The ribs go in @ 5:45 and the butt gets foiled IT @ 162. Now smoke the ribs with just apple for 3 hours and then foil them.
After 2 hours I pulled the foil from the ribs and the butt IT is now @ 190. I was getting concerned if they would all be ready at the same time.

After removing the foil I applied my spicy BBQ sauce and back into the smoker for the final hour.

I get caught up in the kitchen trying to help and I missed my 11:45 by 15 minutes, the butt IT is at 202, so I pull out the ribs and foil them and them pull out the butt and put it and the ribs in the ice chest to sit until we ready to eat @ 1:00.

OK so I pull the butt around 1:00 and it completely fell apart but was not mussy. The ribs had a great smoke flavor were tender but not fall of the bone. I guess it was good because by the end of lunch we had about a slab of ribs and about a 1/2 butt left. I used a modified version of Jeff's rub and BBQ sauce and had 2 other I made. I ended up severing a sweet, sweet and spicy and a spicy bbq sauce.

I really need to thank all of you for all the help because without you I could not have pulled it off.

Now my mother-in-law is already planning a 4th of July party for around 50 people.

Allways good to make points w/ MIL.
Only thing is as you are finding out is they want more.
 
I'm really glad all were happy with all your fixin's and it started out looking good too. Now You do have to keep the MIL happy but it sounds like you kept everyone happy who attended your smokin lunch.
