Happy Easter y'all.  I'm using my new MES 40 for the first time.  I am smoking 14lbs of baby backs using Jeff's Rub, some Pecan and some Hickory pellets.  I typically use the 2-2-1 but I want to try to foil this time.  So two questions...

1. How long to I smoke these ribs for at what temp?

2. The I have a few sets of ribs that are much thicker than the others. Thicker ones on top or bottom? Do I start them and cooker them longer than the thinner ones?

(Don't worry I left the ham up to Dearborn)

Igf you are doing 3-2-1 cooking time is the same . On an MES put the thicker bones to the back right corner. Right side is hotter and back corner is a bit hotter.
