Mom and pop came up from GA to PA and another 30 people as well I was tasked with the second bird (we only have one oven) well let's see who wins! Mom and old school baked bird or me smokin' a bird! Bird in the Brine!
 
GOOD LUCK!!! I'd guess the smoked bird will taste miles better than the baked bird, but it is your Mom after all, so try not to gloat too much.

It's funny. I thought I had a plan for this bird. And every time I think I have it figured I read something different lol. Sheesh. I've read everything for 40 min per pound at 200 degrees to 6 hours at 350 degrees! Lol. I'm so confused now!
 
Hutty, have a great time doing the Turkey(either in the oven or the Smoker) , Maybe start about 3am and let it cook  til' , It should be done by 12pm.

Well I'm thinking the smoked bird too. He looks awesome so far and smells so good the neighbors hinted at coming for dinner ( I did invite them). Regardless of which one is better Mom will always win.
 

This pic makes him look a lot darker than he is. Pulled him off at 167 degrees. Rolled him to his belly and foiled him for the next hour. Pics of carving to come!!!

 A bird cooked to a high degree will usually be dry and tastless unless you inject it before the cooking starts. let us know how it turns out.

I don't think 167˚ is all that high. At smoker temps it'll only coast maybe 5 degrees, and at 172˚ I wouldn't think it would be dry and tasteless.
 
He was delicious. And he's gone. There is left over turkey but its roaster turkey. He was not dry at all I injected him with apple cider and he was stuffed with apples oranges and orange juice. I also put some apple wood smoked bacon under his skin with a few pats of butter. He was awesome!!
