Is it OK to make Dutch's beans ahead and bake the next day. I'm planning on doing them for the first time and want to know if I make them tonight besides the smoking part will they still taste as awesome as everyone says?
They'll taste just as good, however I must caution against adding raw bacon to room temp ingredients, then tossing it into the fridge, as it may take quite some time for it to reach temps below 40*F. If you cut up the bacon and stir it in just before smoking would be best for food safety reasons. In any case, to chill it quickly, place it into a shallow pan/dish...this will cool more quickly due to a larger surface area for thermal energy transfer.
