I'm not sure if this is an omelet, quiche, or casserole? But it tasted good and my family smiled!
What I used:
Eggs
Bacon
Splash of milk
sausage (I used andouille, but that was to finish a package)
Tater Tots (ran out of hash browns)
Cheddar cheese
Onion (I used green to use some up)
Fresh garlic (we always use garlic)
Oregano
Paprika
Heat up DO on high then reduce to low medium.

Cook bacon and save grease

While that's going down prep other stuff and beat eggs. I beat the eggs with splash of milk and put in a dash of oregano and paprika.

When meat is done, I did sausage whole after bacon then sliced up, throw in diced onion to translucent ( or less if you want crunch) and garlic.

I believe Foam told me the good stuff at the bottom is called Groton in Cajun homes?

Layer in taters (I per cooked in oven to cut down on time and ensure some crispy taters. Then meat and a beaten egg gets poured over (I forgot mix in shredded cheddar and cooked onion and garlic to egg before pouring). Sprinkle remaining bacon bits and cheddar over top. Cover let cook ~15 minutes.

Then it's set. Good seasoning would have let this come out as a whole, my daughter likes it when it looks like pizza so that's how I cut it. Sprinkle with more fresh green onion and enjoy!

Sometime when my kids are older I'll get a chance to try this in a fire!
