Dude Inspired Pastrami w/Qview

  1. So I got a meat slicer for my birthday last week and I wanted to give it a test run before the 30 return policy expired and since it was purchased the day after Thanksgiving...I had to get my rear in gear.

    A while back the Dude Abides made some pastrami on his B-day from an already corned beef and so I decided that I would give it a shot.

    I got a 3.5 pound corned beef brisket from the local market and soaked it for about 8 hours in the fridge changing the water every two hours.

    I made a rub of coriander, black and white pepper, brown sugar, mustard seed, paprika and a pinch of kosher salt.

    I refrigerated it for a few hours:

    Threw it on the offset with some apple wood.

    And smoked it for about 10 hours until it reached 165. Pulled it from the smoker and left it to rest.

    It sliced up real nice on the new meat slicer:

    Looks Great, I just had a Pastrami & Swiss on Rye so I could almost taste it...

    Looks great. What slicer did you get? Looks like it did a great job!

    Just put 2 briskets in brine today. 1 will be frozen & kept for corned beef and the other will get smoked for a Strami on Christmas Day!

    You know that just made me realize that out of all the pastrami have done I never once tried one as just corned beef...

    Oh man, you're killin' me! I've got a smoke planned for (hopefully) Monday and Dudestrami is on the menu. Your's look awesome. Thanks for the mention, I appreciate it.

    Now if only the wife comes through with that slicer for Christmas...then I'll be rockin some thin sliced strami like you've got going.

  9. Thanks again, everyone. The one thing I wished I did differently was a bigger brisket. I have been having pastrami for lunch every day and there is only a few slices left.

    I got a Cooks slicer which is a relatively inexpensive 7.5 inch slicer. It was a gift so I did not have too much say in what I got...but as long as I get a few years use and move onto a better one some day in the future, I am happy!
